Objectives: * General objective: Application of biological products to produce some products from clam to increase value - adding and reduce post-harvest losses, contributing to the sustainable development of the clam processing industry in Vietnam. * Specific objectives: - Complete the technological process of production of canned clams (clams soaked in oil, lactic fermented clams, clams added potato sauce) and clam sauce with a scale of 500-1,000 kg of raw materials/batch. - Pilot production of canned clam products: 20,000 boxes (100 g/box for 03 types of products; Each box contains: ≥ 60% of clam meat, protein: ≥ 15%...). - Pilot production of clam sauce products: 10,000 jars/bags (200g/jar (bag), reaching 20oBrix, protein ≥ 2.0%, Naa/Nts ≥ 50%...). Content: - Content 1: Research to build up the draft standards for clam raw materials for the production of canned products and clam sauce. - Content 2: Research to complete the technological process for the production of canned clams (clams soaked in oil, lactic fermented clams, clam meat added potato sauce) using biological products. - Content 3: Research to complete the technological process for the production of sauces/liquid extracts from clams. - Content 4: Complete the technology and pilot production of canned clam products with a scale of 1,000 kg of raw materials/batch, clam liquid extract/clam sauce with a scale of 500 kg of raw materials/batch at the enterprise.
